Bliss balls are one of my favourite 'go-to' snacks. Once you've made a batch of these nutrient dense treats, you're set for a week of quick breakfast getaways, packed lunches and after dinner sweetness. Quick to make, these are a weekly staple in my fridge. Don't be put off by the playdoughesque aesthetic, bliss balls are bursting full of protein, healthy fats, natural flavours and colourings - STRIP'D and ready to be devoured.
8 medjool dates, pitted
1 cup of cashew nuts
1/2 cup of ground almonds (or you can use gluten free oats finely milled in a food processor)
1/2 cup dessicated coconut (unsweetened)
1 dsp coconut oil
Juice and zest of two lemons
Simply whiz in a food processor, then mould into balls. Place in the freezer for 30 minutes, then store in the fridge.
